Classic Beef Chili [No Beans - Low Carb]

As part of the low-carb health plan I've been on, I've been trying to find comforting ways to eat. Chili is one of my go-tos. I love sitting down with a bowl of chili, topped with cheddar cheese and sour cream. It's an easy and satisfying way to rev up the protein and get some fat in. Rather than to keep buying it processed, I've opted for making my own!


Just remember, as with pretty much anything that contains tomatoes, the longer this chili is able to simmer, the better. I allow mine to cook for at least an hour before enjoying.

 

Prep Time: 5 Minutes | Cook Time: 65 Minutes| Total Time: 70 Minutes


Special Equipment

  • 1 Large Pot with Lid

  • Spatula

  • Cutting board and Knife

Ingredients (US Standard)

  • 1 1/2 lb Ground Beef

  • 1 Medium Onion, chopped

  • 1/2tbsp Minced Garlic

  • 15oz can Diced Tomatoes

  • 1/4cup (2oz) Tomato Paste

  • 2 cups Beef Broth (I sub with Chicken Broth)

  • 2tbsp Chili Powder

  • 1tsp Cayenne Pepper

  • 1tsp Cumin

  • 1tsp Italian Seasoning

  • 1/2tsp Salt


Ingredients (Metric)

  • 680g Ground Beef

  • 1 Medium Onion, chopped

  • 7.5g Minced Garlic

  • 424g canned Diced Tomatoes

  • 57g Tomato Paste

  • 473 mL Beef Broth (I sub with Chicken Broth)

  • 16g Chili Powder

  • 1.8g Cayenne Pepper

  • 2.1g Cumin

  • 5.3g Italian Seasoning

  • 2.8g Salt


Method

  1. Add chopped onion and ground beef to a large pot. Cook on Medium-High heat, using a spatula to break beef apart until it is crumbly. Cook until beef is fully browned, about 5 minutes.

  2. Use a strainer to drain grease from beef before returning it back to the pot.

  3. Add Broth, Garlic, Diced Tomatoes, Tomato Paste, Chili Powder, Cayenne Pepper, Cumin, Italian Seasoning, and Salt to the pot. Set heat to High and bring to a boil, stirring to combine.

  4. Once chili is boiling, reduce heat to Low and cover with lid. Continue to cook for 1 hour, stirring occasionally.

  5. Enjoy hot with toppings of choice.
