Deep Fried Open Faced Tacos (Tostadas)

Tostadas are a simple and delicious dish found throughout Mexico. The version in this recipe will contain chicken, but toppings can include everything from chorizo to seafood.


Note: The name tostada is used to refer to both the dish and the fried tortilla that it comprises of. You can buy premade tostadas at many grocery stores. If you choose to take this approach, then skip cooking Steps 1-3.

Special Equipment

  • 1 Large Frying Pan (if you are not using store-bought tostadas)

  • 1 Cutting Board

Ingredients (US Standard)

  • 1/2 cup Cooking Oil of choice

  • 1lb Shredded Chicken

  • 1 yield Refried Beans (or use store-bought)

  • 1 cup Shredded Lettuce (or substitute with cabbage)

  • 1 cup of Shredded or Grated Mexican Cheese (Queso Quesadilla, Queso Cotija, or Queso Fresco are recommendations)

  • Salsa of Choice (we enjoy the Chipotle salsa from Herdez)

  • Sour Cream, optional

Method


  1. Add cooking oil to a frying pan and heat on Medium High about 2-3 minutes. While oil is heating, line a plate with a paper towel.

  2. Add one tortilla to the oil and let it cook until brown on one side before flipping. You may need to use a fork to push the tortilla into the oil, ensuring that it cook evenly. Tortillas will cook for about 2 minutes on each side.

  3. Once done cooking, transfer the tortilla to the the plate from Step 1. The paper towel will absorb excess oil. Repeat steps until desired number of tortillas have been fried.

  4. To assemble your tostada, first spread about 1/8 cup of warm refried beans on the tortilla.

  5. Now, add about 1/4 cup of your shredded chicken (or meat of choice) on top of the beans. (Note: You can leave meat out for a vegetarian option)

  6. Spread 1-2 teaspoons of salsa on top of the meat. (Note: The salsa acts as a binding agent!)

  7. Add about 1/4 cup of shredded lettuce on top of the salsa.

  8. Lastly, add about 1/8cup of grated cheese to top off the tostada. Glaze with optional sour cream before enjoying.
