FUDGE COOKIES!



These cookies are a wonderful blend of both chewy and firm!!!! I use Truvia Sugar Substitute, but you can use the real thing instead. Nutritional Data for both options are calculated below!!!!!!!! THAAAAAAAAANKS!

 

Prep Time: 15 Minutes | Cook Time: 9 Minutes | Total Time: 24 Minutes


Special Equipment

  • 2 large baking pans

  • Electric hand mixer or blender

  • 2 large mixing bowls

  • Rubber spatula (or large spoon)

  • 1 tbsp cookie scoop (optional, but makes your life a lot easier)

  • Cooling Rack (optional, but makes your life easier. Use 1-2 large plates as substitute)

Ingredients (US Standard)

  • 1/2 cup (or 1 stick) Butter (cold)

  • 1/2 cup White Granulated Sugar (or substitute with Truvia Granulated)

  • 1/2 cup Brown Sugar (or substitute with Truvia Brown)

  • 1 tsp Vanilla Extract

  • 1 large Egg (cold)

  • 1 cup All Purpose Flour

  • 1/3 cup Cocoa Powder

  • 1/2 tsp Baking Soda

  • 1/2 tsp Salt

  • 1/4 cup White Chocolate Chips

  • 1/4 cup Reeses Baking Chips

Ingredients (Metric)*

  • 113g Butter (cold)

  • 100g White Granulated Sugar (or substitute with Truvia Granulated)

  • 106g Brown Sugar (or substitute with Truvia Brown)

  • 5mL Vanilla Extract

  • 1 large Egg (cold)

  • 120g All Purpose Flour

  • 30g Cocoa Powder

  • 2.4g Baking Soda

  • 3g Salt

  • 40g White Chocolate Chips

  • 40g Reeses Baking Chips

*All metric units are converted and should be considered more or less.


Method

  1. Preheat oven to 350°F (177°C). Grease baking pans with cooking spray, wipe with paper towel to remove excess.

  2. Place cold butter on a microwave safe plat. Microwave for 15 seconds and then add to a large mixing bowl.

  3. Add the Granulated Sugar and Brown Sugar to the bowl. Using an electric hand mixer, cream together until fully integrated (about 60 seconds).

  4. Add the Vanilla and the Egg. Mix until fully integrated.

  5. In a separate mixing bowl, add the Flour, Cocoa Powder, Baking Soda, and Salt. Combine with a fork.

  6. Add half of the Flour Mixture to the Butter Mixture, combining JUST until no dry mix is left. Add the remaining flour and combine again just until no dry flour is remaining.

  7. Fold the White Chocolate Chips and Reeses Baking Chips into the mixture with a Rubber Spatula.

  8. Use your 1tbsp Cookie Scoop to place cookies on the baking sheets, about 1 inch apart.

  9. Bake for 9 minutes. Remove from the oven, and allow the cookies to rest for 10 minutes.

  10. After 10 minutes have passed, transfer the cookies to a cooling rack.
