Lemon Cheesecake Fat Bombs [Low Carb - 3 net carbs]



Fat bombs are awesome for those wanting to follow a low carb diet, but these just make a good snack / dessert in general!

 

Prep Time: 5 Minutes | Cook Time: 0 Minutes | Total Time: 5 Minutes + 40 to rest


Special Equipment

  • One Tablespoon Cookie Scoop (not required, but makes your life easier); or

  • Tablespoon Measuring Spoon

  • One Large Mixing Bowl

  • One Airtight Container

  • Electric Hand Mixer or Countertop Dessert Mixer

Ingredients (US Standard)

  • 8oz Cream Cheese (full fat)

  • 1/3 cup Coconut Flour

  • 1.5tbsp stevia (or use regular sugar - but that won't be low carb)

  • 2tbsp + 2 tsp of Lemon Juice

  • 1tsp Vanilla Extract

Ingredients (Metric)*

  • 227g Cream Cheese (full fat)

  • 41g Coconut Flour

  • 2.5g (or use regular sugar - but that won't be low carb)

  • 40ml of Lemon Juice

  • 5ml Vanilla Extract

*All metric units are converted and should be considered more or less.


Method


  1. Place the cream cheese on a microwave safe bowl. Microwave for 10-15 seconds, until soft to the touch and room temperature.

  2. In your mixing bowl, add all of the remaining ingredients (Coconut Flour, Sweetener, Lemon Juice, Vanilla Extract). Mix until fully combined. (Use the paddle attachment for countertop blender if using).

  3. Add the cream cheese to the mixture, beating until fully integrated. The mixture will be thick and fluffy.

  4. Freeze the mixture for 15 minutes.

  5. After freezing, use your tablespoon cookie scoop to create separate the mixture into balls. Roll each scoop in your hands for a split second to smoothen into balls if desired. (Do not roll for too long, as the body heat from your hands will cause the scoop to melt). Place each ball in your airtight container after rolling.

  6. Freeze for approximately 30 minutes before serving. Keep refrigerated for up to 13 days.
