No-Carb Creamy Mashed "Potatoes"

An excellent alternative to the real thing, these mashed "potatoes" are made with boiled cauliflower, and with no net carbs per serving! Feel free to add any spices that you typically like in your homemade mashed potatoes (optional suggestions below), and enjoy as a low calorie, low-carb side to your entrée of choice.

Special Equipment

  • 1 Large Pot

  • 1 Strainer (to drain the cauliflower)

  • 1 Potato Masher;

Ingredients (US Standard)

  • 2 large heads of Cauliflower (cut into florets)

  • 6 tbsp Butter, unsalted

  • 4 tbsp Garlic

  • 6 tbsp Sour Cream

  • 1/2 cup Parmesan Cheese, grated

  • 1/2 tsp Salt

  • 1/2 tsp Black Pepper, ground

  • Cayenne (optional)

  • Low Sodium Chicken Bouillon (optional)

  • Chopped Cilantro (optional)

  • Chopped Parsley (optional)

  • Coconut Sugar (optional)

  • Shredded Cheese (optional)

Ingredients (Metric)*

  • 2 large heads of Cauliflower (cut into florets)

  • 84g Butter, unsalted

  • 60g Minced Garlic

  • 90g Sour Cream

  • 60g Parmesan Cheese, grated

  • 2.8g Salt

  • 1.4g Black Pepper, ground

  • Cayenne (optional)

  • Low Sodium Chicken Bouillon (optional)

  • Chopped Cilantro (optional)

  • Chopped Parsley (optional)

  • Coconut Sugar (optional)

  • Shredded Cheese (optional)

*All metric units are converted and should be considered more or less.


Method

  1. Fill large pot with water, cover with lid, and bring to a boil on High.

  2. Add cauliflower florets and cook for about 10 minutes, until the florets can easily be pierced with fork and slide right off.

  3. Use strainer to drain the cauliflower, then set aside.

  4. Place empty pot back on stove, and reduce heat to medium. Melt butter, then add garlic. Cook until fragrant, about 1 minute. Turn off stove burner.

  5. Add cauliflower back to pot, and mash with potato masher until lumps are minimal and it's well combined.

  6. Add sour cream and parmesan cheese. Add salt, pepper, and any other desired spices (see ingredient list for optional suggestions).

  7. Stir with spoon until well combined. Alternatively, combine with potato masher. Serve immediately with entrée of choice.

Recipe is derived from "Buttery Mashed Cauliflower" by Cafe Delights. Some ingredients were adjusted to suit my personal taste, as well as cooking method.
