(Quick and Easy) Mole Poblano





Mole is probably one of the dishes most representative of Mexican cuisine. The dish and its hundreds of different regional variations perfectly embody Mexico's mestizaje, or blending of different cultures. Making a mole from scratch can be an arduous and time consuming task. However, there is a way to enjoy the flavors of a rich homemade mole while being conscious of the time constraints of the modern world. With a few extra ingredients, a grocery store packaged mole can become an easy and delicious meal!

Special Equipment

  • Cutting board and knife

  • Blender

  • Medium Saucepan

Ingredients (US Standard)

  • 8.25 oz container of Mole Paste (we recommend Rogelio Bueno)

  • Half of a large white onion, sliced (about 1cup)

  • 2 Roma Tomatoes, sliced

  • 1 Corn tortilla, toasted (or substitute with 1 toasted piece of bread)

  • Half of one disc of Hot Chocolate Tablet (We recommend Ibarra or Abuelita - though it is more sweet)

  • 3 dried Chile Guajillo, stems removed

  • Half of a 3.7oz can of Chipotle Peppers (or about 3 Chipotle Peppers)

  • 2 cups Chicken Broth

  • Sesame Seeds, optional

Ingredients (Metric)*

  • 234g container of Mole Paste (we recommend Rogelio Bueno)

  • Half of a large white onion, sliced (about 120g)

  • 2 Roma Tomatoes, sliced

  • 1 Corn tortilla, toasted (or substitute with 1 toasted piece of bread)

  • Half of one disc of Hot Chocolate Tablet (We recommend Ibarra or Abuelita - though it is more sweet)

  • 3 dried Chile Guajillo, stems removed

  • Half of a 105g can of Chipotle Peppers (or about 3 Chipotle Peppers)

  • 473mL Chicken Broth

  • Sesame Seeds, optional

*All metric units are converted and should be considered more or less.


Method

  1. Add onion, tomatos, chile guajillo, and chipotle peppers into the blender. Also add 1 cup of chicken broth.

  2. Pull the tortilla (or bread) apart with your hands and drop in blender. Blend until fully combined in a puree.

  3. Add remaining cup of chicken broth to a medium sized saucepan. Heat on medium for about 2 minutes.

  4. Add contents of blender to the saucepan, then stir to fully combine.

  5. Heat for another 5-10 minutes to a simmer, allowing the flavors to develop until a light boil starts.

  6. Add the entire contents of the prepackaged mole paste and the chocolate tablet.

  7. Allow the mole to cook on Medium or Medium-Low, stirring frequently until the mole paste and chocolate tablet are completely dissolved into the sauce.

  8. Mole should have a semi-thick, gravy-like consistency. If the mole becomes too thick, add additional chicken broth. If the mole is too thin for your liking, add about 1tsp of corn starch to thicken it.

  9. Once the contents are fully combined, serve over meat of choice (chicken is the most traditional). Garnish with optional sesame seeds. Enjoy!
