Strawberry Jam (No Added Sugar or Artificial Sweetener)

This one is similar to the Strawberry Preserves recipe, but is quicker and simpler. Utilizing the natural sweetness of strawberries, there is no added sugar or artificial sweetener.


Hey, wait a minute... Isn't this actually preserves... or Jelly?


First of all, if this question comes to your head, I'd politely but firmly ask you to "Shh."


Just enjoy the flavor. I promise. All that matters is that it tastes good.


Second of all, I looked into this a bit while I was doing research for my cooking endeavor. From what I saw, the key difference between Jam and Preserves is the preparation of the fruit you are using. If you are starting your recipe with sliced or crushed fruit, you are creating a jam. If you are throwing whole fruit into your pan, you're preparing preserves.


As for jelly? Mmm... you'll need to stick to only using fruit juice for that one.

 

Prep Time: 5 Minutes | Cook Time: 20 Minutes [+2 hours to cool]| Total Time: 25 Minutes [+2 hours to cool]


Special Equipment

  • (1) 16oz Mason Jar

  • 1 Medium Nonstick Saucepan

  • 1 Blender

  • 1 Strainer

  • 1 Cutting Board

  • 1 Canning Funnel (optional, but you'll need to be careful if you don't have one).

Ingredients (US Standard)

  • 1lb Fresh Strawberries

  • Juice of 1/2 Lemon (1tbsp)

Ingredients (Metric)

  • 455g Fresh Strawberries

  • Juice of 1/2 Lemon (15mL)

Method

  1. Place the strawberries in the strainer. Rinse under running water. Then put them on the cutting board.

  2. Carefully cut the uppermost portion of the strawberries, just enough to remove the green leaf.

  3. After prepping, place the strawberries in your blender. Add the Lemon Juice.

  4. Blend on High, until the strawberries have become a paste.

  5. Place strawberries into your saucepan. Heat on Medium-High, until the mixture comes to a boil. This shouldn't take long.

  6. Reduce heat to Medium, or Medium Low. Cook for 20 minutes, stirring constantly to prevent the mixture from burning to the pan. The jam should be frothy as it cooks.

  7. After 10 minutes, remove the saucepan from the heat. Using a funnel, pour the jam into your mason jar.

  8. Allow it to cool fully, for about 2 hours, before switching to refrigerator. Tastes best when it is cold!
